SEATTLE: (Manca’s Cafe): So quick, so easy and so delicious! Make it in five, eat it in twenty. Serve with jam and plain yogurt, or powdered sugar and lemon. OR, skip the sugar and add canned chilies (or jalapenos) and serve with grated cheese. YUM.

- 3 eggs
- 1/2 cup flour
- 1/2 cup milk
- 1 tablespoon sugar
- pinch of salt
- 4 tablespoons butter
- Preheat oven to 425
- Whisk eggs in a bowl, then add flour and beat to combine really well. This helps to eliminate any lumps of flour.
- Add milk, sugar and salt, and beat vigerously to get lots of air in the batter
- Melt butter in a heavy skillet, pour in batter and place in oven
- Bake about 10 – 15 minutes until puffed and brown
